Enshi Yulu from Tunbao Huazhi Cooperative is our favourite in terms of organic production, the producers' kindness and knowledge of local green tea tradition, all around competence. 
Now the 5th generations of producers, the cooperative treats its employees in a fair way, with bonuses, reduced work shifts and good salaries comparing to the vast majority of local businesses. We put these conditions above anything else in our own work organization.
Huazhi's Yulu (or dew's scent), releases a sharp, sweet, but generously lasting flavor in the mouth, and this variety has a complexity in it of wild field flowers that abund in organic tea plantations. 
The locals usually make this tea in hot boiling water and glass cups, in a very effective and simple way. It can be infused for 3 to 5 minutes before drinking and then re-infused for same time or slightly more.
